Trumer Pils traces to 1601 in Obertrum am See near Salzburg, where the Sigl family — now in its eighth generation — has spent centuries perfecting exactly one thing. In 2004 a band of American brewers built a sister brewery in Berkeley rather than ship the beer across an ocean, and today it's brewed fresh on California's Central Coast to the identical recipe: the same noble hops, malt, and proprietary Salzburg yeast, strictly under the Reinheitsgebot purity law, with a signature husk-removing milling step and a patient three-week fermentation. The result is the pilsner other brewers name as their benchmark — brilliantly pale, snappy floral-herbal hops, delicate malt, and a bone-dry, immaculately clean finish.
