It's true single-estate spirit: they grow their own Espadín for eight patient years, then harvest, roast, ferment, distill, and bottle everything themselves from just three ingredients — agave, water, and (as they put it) a lot of love. The style is deliberately bright and gentle: citrus, pineapple, and pear over roasted-agave caramel and a thread of ginger-cinnamon spice, with a silky finish carrying only a hint of smoke.
