Poe Wines Ultraviolet Sparkling Rose

From Samantha Sheehan — the Napa-based winemaker behind the acclaimed POE label and Mommenpop aperitifs, and one of Food & Wine's "Women to Watch" — Ultraviolet is her mission to make seriously crafted California wine nobody has to feel precious about. After six years of making traditional-method sparklers at POE, she built this playful rosé on Cabernet Franc from Coombsville (the same fruit behind her Ultraviolet Cabernet) brightened with a splash of Mendocino French Colombard, running a slow, cold seven-week tank fermentation for fine, persistent bubbles. Organically farmed fruit, nothing added but a whisper of sulfur: lemon blossom and strawberry aromatics, underripe peach and orange peel over lively minerality, and a bright grapefruit finish.
