Created by Creole apothecary Antoine Amédée Peychaud in his New Orleans French Quarter pharmacy in the 1830s, these are among the oldest commercial bitters in America — and the defining ingredient of the Sazerac. Lighter and more floral than Angostura, with signature anise and cherry notes over a gentian backbone, they bring a rosy hue and bright lift to everything from sours to Negronis. Distinct enough that serious bars always stock both.
