Les Vins Pirouettes Orange Cubique 24
From Les Vins Pirouettes, the celebrated Alsace collective founded by natural wine legend Christian Binner to help organic and biodynamic growers escape the anonymity of the co-op system — every cuvée carries its grower's first name on the label. This one belongs to François Bléger, who farms granite-soiled vineyards at his family estate in Saint-Hippolyte. Hand-harvested Gewürztraminer sees a twelve-day whole-bunch carbonic maceration, then rests nine months in foudre and stainless steel. The grape's famous perfume turns fascinating with skin contact: lychee and rose become orange peel, apricot, and exotic spice, framed by structured tannins and bright Alsatian freshness. Reach for it with anything spicy — Thai, Indian, Szechuan — or a washed-rind cheese.
