Kikumasa Nigori Junmai
Silk from Japan’s most famously dry brewery. Kiku-Masamune has brewed in Nada — Kobe’s legendary sake district — since 1659, and for three and a half centuries its name has been shorthand for bone-dry, food-first sake. That’s what makes Kinushiro (“white silk”) such a charmer: it’s the house’s plush, sweet exception. A junmai nigori left silky-cloudy with fine rice particles, it pours like white velvet and drinks like dessert from a fruit stand — banana and melon aromas from the brewery’s own yeast over a creamy, gently sweet palate (a dramatic −40 sake meter value) kept honest by bright acidity and a light 10% alcohol. Shake gently to wake the cloud, serve well chilled. The brewery’s own pairing call is inspired: yakiniku and grilled meats, where the sweetness plays sauce — also spicy food, fruit desserts, or over ice as a nightcap.
