Hakkaisan ages this Junmai Daiginjo for three full years in a yukimuro — an insulated room packed with snow that holds a stable 37°F without using any electricity, a centuries-old storage method native to Niigata's snow country. Made from Yamada Nishiki and Gohyakumangoku rice polished to 50% and bottled at a robust 17% ABV, the extended cold rest gives it a noticeably rounder, more velvety texture than a typical Daiginjo, with layered notes of melon, pear, and honeydew that linger into a long finish.
