Cazcanes Reposado NO.7
Cazcanes' award-winning Blanco, given time in wood on its own terms. Rather than aging to a calendar, master distiller Francisco "Don Chico" Jiménez ages to taste: the final blend marries barrels rested anywhere from a few months to nearly eleven in used American white oak ex-bourbon casks, reworked and recharred to the house's own spec, selecting only those that best capture the conversation between agave and oak. The same obsessive foundations remain — certified organic valley agave picked at peak sugar, volcanic spring water trucked in from Navichi Springs, additive-free confirmed — but the barrel adds salted caramel, vanilla, baked pear, cinnamon, and butterscotch over that earthy Amatitán mineral core, with a black-pepper warmth on the dry, lingering finish. A 95-point sipper that still has the agave backbone for a knockout reposado Old Fashioned.
