Cazcanes Anejo NO. 7

Cazcanes Anejo NO. 7

The deepest expression of the core Cazcanes line — and still unmistakably agave-first. Like its siblings, the No. 7 Añejo is aged to taste rather than time: a blend of barrels rested from one to over two years in used American oak ex-bourbon casks, reworked and recharred to the house's own spec, with each barrel sampled and selected for what it adds to the whole. The foundations don't change — certified organic valley agave slow-cooked 24 hours, Navichi Springs volcanic water, additive-free confirmed, all under master distiller Don Chico at NOM 1614 in Amatitán. Amber in the glass and richly layered: crisp apple, almond cream, maple, and toffee unfold into cherry, cigar box, nutmeg, and dark chocolate, with warm spice and coconut sweetness carrying a long, lush finish where deep agave still gets the last word. A slow sipper for bourbon drinkers and agave purists alike.
