If you ask a Guadalajara bartender what they actually drink, this is usually the answer. Destilería Cascahuín has stood in El Arenal, in the valley lowlands of Jalisco, since 1904 — three generations of the Rosales family, now industry icon Salvador Rosales Torres alongside his son "Chava," working the old way: agave roasted slowly in brick ovens, crushed on a small hand-operated roller mill, fermented in open stainless and concrete tanks, and double-distilled through a copper coil. Verified additive-free, the Blanco is light-bodied but full of place — black pepper, orange peel, and fresh grass over damp earth, roasted yam, and a whisper of oregano. One of the most admired value tequilas in the category: sip it neat like they do in Jalisco, or make the margarita you'll measure all others against.
