Bozal means "untamed" — a nod to the wild agaves at the heart of this mezcal and the untamed traditions behind it. Bozal's flagship Ensamble marries cultivated Espadín — the workhorse "mother agave" of Oaxaca — with wild-harvested Barril and Mexicano, grown in the villages of the southern Oaxacan valleys and made the ancestral way: piñas roasted in earthen pit ovens, crushed under a horse-drawn stone tahona, fermented naturally in the open air, and double-distilled in copper pots. The pour is a masterclass in balance at 47%: wet earth and gentle smoke from the Espadín, lime zest, florals, and a flicker of green pepper from the Barril, and the Mexicano's warm, viscous, mineral-laced finish. Wine Enthusiast rated it 90 points, and the hand-thrown ceramic bottle is half the charm. Sip it neat, or build the best Negroni and Oaxacan Old Fashioned on your back bar — and for every maguey harvested, Bozal plants two more in a wild mountainside nursery.
