The closest thing on the market to the near-mythical Amer Picon, Bigallet China-China has been made at the foot of the French Alps to the same recipe since 1875. Sweet Valencia and bitter Curaçao orange peels are macerated and triple-distilled in copper alembics, then layered with gentian, cinchona, anise, clove, and Alpine herbs over a rich caramel base.
