Aurora Amontillado Sherry 750ml
Where the salt air gets into the barrel. Bodegas Yuste ages its Aurora wines at Bodega Los Ángeles in the Barrio Alto of Sanlúcar de Barrameda — the seaside corner of the sherry triangle where Atlantic humidity breathes right through the cellars — and names the range for Aurora Ambrosse Lacave, the label's bride painted on the beach at the 1890 Feria de la Manzanilla. This Amontillado is born as old Manzanilla Pasada: aged for years under the flor yeast by the sea, then fortified and allowed to age oxidatively in a solera laid down in 1991, picking up an estimated 15–20 years of average age along the way. The result is coastal amontillado at its most evocative — sea spray, seaweed, hazelnut and walnut husk, fig, and orange peel over a dry, salty palate of salted caramel, pecan, and toffee with a meaty, faintly smoky finish. Serve cool with jamón, aged cheeses, roasted almonds, mushroom anything — or make the world's most correct Bamboo cocktail.
