Peychaud's Bitters

Peychaud's Bitters were created by Antoine Amedee Peychaud in New Orleans in the 1830s — making them among the oldest commercial bitters in America. Lighter and more floral than Angostura, with prominent anise and cherry notes, they're the defining ingredient in a Sazerac and essential to the Louisiana cocktail tradition. Distinct enough from Angostura that serious cocktail bars always stock both.
