Sly Vin is Alice Bouvot's orange wine made from Sylvaner grapes harvested by hand from Domaine René Clauss in Alsace's Ergersheim, then brought to her Jura cellar for six weeks of whole-bunch skin contact. No additions whatsoever — not even a drop of sulfur. The result is mineral, herbaceous, and alive with citrus layers and a distinctly Alpine character that rewards the adventurous.
