Kubota Seppou Junmai Daiginjo

Seppou is Kubota's seasonal spring release, and the White Label leans into that theme — Asahi Shuzo's Niigata rice, Gohyakumangoku, gets milled down to 50% for the koji and a striking 33% for the main mash, then fermented cold and rested near-freezing to lock in fragrance. The result is light at 14% ABV, with muscat grape and musk melon up front and a gentle sweet-tart balance that never tips too far either way. Serve it chilled for the crisp side, or let it warm slightly to see the aroma open up — either way, it's built around the arrival of spring.
