Izumibashi is one of the rare breweries that grows, mills, and brews its own rice from start to finish, and Kuro Tombo — “Black Dragonfly” — is where that control shows most. It's made the old way, with the labor-intensive kimoto method instead of modern lactic acid shortcuts, using Yamada Nishiki grown by the Hashi family themselves in Kanagawa, then aged for at least two years. The payoff is a Junmai that's deceptively light on its feet for something this rich — chestnut, cream, and steamed rice up front, with real depth when served slightly warm.
