Deboutbertin Pacotille 19

This is a Pettillant Naturel of Chenin Blanc. The grapes were harvested by hand from older 45+ year old vines. Fermentation on the skins with indigenous yeasts adds more texture and phenolics. The Chenin Blanc spent 12 months on the lees in old barriques. Deboutbertin uses no machinery at all so the certified organic vineyard is plowed by horse and the wine is always moved by gravity. Zero intervention: no filtration, completely hands on, natural winemaking. No sulfur added.
