Born Gold comes from Katoukichibee Shouten, a Fukui Prefecture brewery now in its eleventh generation, and it's a muroka style — meaning it skips carbon filtration entirely, so nothing gets stripped out before bottling. Made from Yamada Nishiki rice polished to 50% and rested for a full year at -10°C before blending, it's remarkably smooth for an unfiltered sake, with apple, pear, and sweet rice on the nose and a clean, dry close. It's picked up serious hardware, including a Platinum Award at Kura Master, and it's an easy recommendation for anyone who wants a Junmai Daiginjo with real depth.
